Take for example the \u003cem\u003e\u003cstrong\u003eCooley Distillery\u003c\/strong\u003e\u003c\/em\u003e, which was founded by John Teeling, and Walter Teeling in 1782, setting up a distillery on Marrowbone Lane in Dublin.\u003cbr\u003e\r\n\r\n\t \u003cbr\u003e\r\n\r\n\tTeeling’s way of doing things is perhaps a \u003cstrong\u003e\u003cem\u003etad unorthodox\u003c\/em\u003e\u003c\/strong\u003e. They blend, age and bottle Whiskey from different sources much in the form of \u003cem\u003e\u003cstrong\u003eScottish independent\u003c\/strong\u003e\u003c\/em\u003e bottlers. And that is the reason why we are so fond of their work. Not only are they the first ones to \u003cem\u003e\u003cstrong\u003eopen a new distillery\u003c\/strong\u003e\u003c\/em\u003e in Dublin in decades, they also do things with a new perspective and give the traditional Irish Whiskey a\u003cem\u003e\u003cstrong\u003e new style\u003c\/strong\u003e\u003c\/em\u003e.\u003cbr\u003e\r\n\r\n\t \u003cbr\u003e\r\n\r\n\t\u003cem\u003e\u003cstrong\u003eTeeling Single Grain\u003c\/strong\u003e\u003c\/em\u003e is aged in \u003cstrong\u003e\u003cem\u003eex-Cabernet Sauvignon\u003c\/em\u003e\u003c\/strong\u003e red Wine casks, not in ex-Bourbon barrels as one would presume. It’s predominantly \u003cstrong\u003e\u003cem\u003ecorn grain\u003c\/em\u003e\u003c\/strong\u003e based, which gives it a neat, sweetened character somewhat reminiscent of Bourbon.
